Riesling-Spiked Oysters

Serves 4

Oysters are a wonderfully decadent starter and this elegant recipe pairs perfectly with our Dry Riesling.


  • 2 dozen Pacific oysters, shucked
  • 2 lemons, juiced
  • 2 Tbsp Trefethen Olive Oil
  • ¾ cup Trefethen Dry Riesling
  • ½ tsp flaky salt


  • 1Arrange the oysters on a platter of ice.
  • 2Place the Trefethen Olive Oil, Dry Riesling, lemon juice, and salt in four separate bowls on the same platter.
  • 3To eat the oysters, just add a few drops of the olive oil, a teaspoon or so of the Riesling, a few drops of lemon juice, and a tiny pinch of salt and pop straight into your mouth.
  • 4Enjoy with Trefethen Dry Riesling and good friends!
