Black Pepper BBQ Pork Ribs

Bold, smoky, and richly seasoned, these black pepper crusted ribs are a summer staple. Perfect for a backyard gathering or a casual evening in, they pair beautifully with a glass of your favorite Trefethen red.

Ingredients

  • 2 rack pork back ribs (membrane removed and pat dry with towel)
  • 4 Tbsp kosher salt
  • 4 Tbsp fresh coarse ground black pepper
  • 2 Tbsp garlic powder
  • 2 Tbsp onion powder
  • 2 Tbsp smoked paprika
  • 2 tsp brown sugar

Procedure

  • 1Combine salt, pepper, garlic powder, onion powder, paprika, and brown sugar in a mixing bowl.
  • 2Be sure to pat the ribs dry the best you can. Generously season both sides of the ribs with the black pepper rub. Let sit at room temperature for 30–60 minutes or refrigerate for up to 12 hours to develop a more robust flavor and deeper seasoning.
  • 3Preheat oven to 275 degrees. Ready a baking sheet with a wire rack. Cooking on the rack will ensure a more even roast. Place the seasoned ribs meat side up onto the rack and bake for 2.5 to 3 hours or until tender but not falling off the bone.
  • 4In the last thirty minutes of roasting the ribs, prepare your grill. Heat to 300 degrees. Once the ribs are tender, remove from the oven and place on the grill, meat side down, to get a crust on the ribs and to add some smoky flavor. Cook to desired doneness.
  • 5Remove from the grill and let the racks rest for 5–10 minutes. To serve, slice between each bone and cover with your favorite sauce and enjoy with your favorite bottle of 2022 Dragon’s Tooth Red Blend!
