Roasted Balsamic Strawberry Crostini

If you’ve never tried roasting strawberries, DO IT. They’re sweet, melty perfection (and they make the whole house smell amazing). A drizzle of balsamic glaze brings out even more flavor and perfectly complements the subtle citrusy, crisp notes of Trefethen Chardonnay. Not sure about you, but I tend to gravitate more towards white wines (especially as the weather warms up) and this Chardonnay is perfect for any occasion! It’s so refreshing, bright and smooth. Ingredients

1 lb. strawberries, quartered

2 tbsp balsamic glaze (reduction) + more for topping

2 tbsp granulated sugar

2 tbsp chopped mint

1 baguette, toasted

Vegan ricotta

Fresh basil and mint

Pistachios 

Instructions

Heat oven to 375˚F. Slice strawberries and toss in balsamic glaze, sugar and mint. Transfer to a baking sheet and roast for 25-30 minutes, until strawberries are tender and fragrant. 

Slice the baguette, brush each slice with olive oil and toast in the oven for 15 mins (at same temp).

Let the bread cool slightly, then spread vegan ricotta on top of each slice. Top with roasted strawberries, crushed pistachios and more fresh basil and mint. Enjoy! #crowdedkitchen
