2018 Chardonnay Verjus
Verjus is the pressed juice of early harvested wine grapes.
This 2018 verjus is made from Chardonnay grown in our estate vineyards. As the juice is not fermented, there is no alcohol. Although it is quite tart, verjus has a more gentle flavor than vinegar. It is a great way to add a little acidity to dishes with a sweet-tart taste and is often used to heighten flavors.
HERE ARE A FEW IDEAS:
• Use instead of lemon or vinegar in dressings
• Use in a soup or to deglaze a pan
• Use in sauces: cream, butter, or hollandaise
• Use it to poach fruit or fish
• Make a delightful sorbet
• Mix 50/50 with sparkling water for a refreshing spritzer
Trefethen Family Chardonnay Verjus Vinaigrette
Yield: 1 cup
1 each Small Shallot, minced
1 tsp. Dijon Mustard
1 tsp. Salt
½ cup Trefethen Family Verjus
¼ cup Trefethen Family Chardonnay
½ cup Olive Oil
¼ cup Trefethen Family Extra Virgin Olive Oil
Place shallot, mustard, salt, verjus, and wine into a mason jar large enough to hold all ingredients. Allow
to rest and pickle for about 10 minutes. Add the oils and place a lid on the jar and tighten. Shake
vigorously for about 20 seconds. Taste and adjust seasoning if desired. Use to dress your favorite salad
mix. Stores will in the refrigerator. Enjoy with Trefethen Family Harmony Chardonnay.
