2005 Cabernet Sauvignon
Our Cabernet Sauvignon vines are planted in the northwestern quadrant of our estate vineyard in the Oak Knoll District of Napa Valley, in gravelly soils that warm quickly in the spring. This warmer site, combined with limited yields, produces Cabernet Sauvignon fruit with bright, complex flavors, resulting in wine with deep ruby color and heady aromas of plums, blackberries, and forest-floor spice.

A warm winter led to early budbreak, but persistent spring rains set back vine development. Mild summer temperatures resulted in slow, even ripening of the grapes. A classic Indian summer brought the harvest to fruition, enabling our Cabernet to enjoy a long hang time and develop rich, concentrated flavors at moderate sugar levels.
The WineDeep ruby in color, this complex Cabernet Sauvignon exhibits luxurious nose of blackberry, black cherry, plum, black currant, black pepper, cola nut, and chocolate with a hint of black pepper and olive. The tannins are ripe and velvety, leading to a richly textured palate. The wine’s fresh, rich raspberry jam, blackberry, currant, and chocolate flavors lead to a long persistent finish of cherry and toasted oak vanilla.
Food AffinitiesDelicious with beef, lamb and game dishes, especially those incorporating oregano, thyme, mushrooms and black pepper.
